Mini Brie Puff Pastry Triangles

Flaky puff pastry filled with creamy brie, sweet pan-seared onions, tender red pepper, and Garlic Luxe garlic salt. These little triangles are buttery, savory, and perfect as an appetizer or party bite.

Ingredients

  • 1 sheet puff pastry, thawed

  • 1 small wheel or wedge of brie, cut into small pieces

  • 1 small onion, thinly sliced

  • 1/2 red bell pepper, thinly sliced small

  • 1 tbsp butter or olive oil

  • 1/2 to 1 tsp Garlic Luxe garlic salt

  • 1/4 tsp black pepper

  • 1 egg, beaten (for egg wash)

Instructions

  1. Cook the filling
    Heat butter or oil in a pan over medium heat.
    Add onion and red pepper. Cook until soft and lightly golden, about 8–10 minutes.
    Season with Garlic Luxe garlic salt and black pepper. Let cool slightly.

  2. Prep the puff pastry
    Preheat oven to 400°F (200°C).
    Roll out the puff pastry lightly and cut into squares.

  3. Fill
    Add a small spoonful of the onion and pepper mixture to each square.
    Top with a small piece of brie.

  4. Fold into triangles
    Fold each square corner to corner to make a triangle.
    Press edges with a fork to seal.

  5. Brush and bake
    Place on a lined baking sheet.
    Brush with beaten egg.
    Bake for 15–20 minutes or until puffed and golden brown.

  6. Serve
    Let cool for a few minutes and serve warm.

Optional add-ins

  • A little honey for sweet-savory flavor

  • Fresh thyme

  • Crushed walnuts

  • A spoon of fig jam inside each triangle
