Roasted Beet, Cucumber & Feta Salad

Ingredients

  • 2 fresh red beets

  • 1 cucumber, sliced

  • ¼ red onion, thinly sliced

  • 2 tablespoons fresh cilantro, chopped

  • ¼ cup feta cheese, crumbled

Dressing

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • ½ teaspoon garlic powder (or 1 small garlic clove minced)

  • Salt, to taste


 

Instructions

1. Roast the Beets

  1. Preheat the oven to 400°F (200°C).

  2. Wash the beets and trim the ends.

  3. Wrap each beet individually in aluminum foil.

  4. Place them on a baking sheet and roast in the oven for 1 hour.

  5. Remove from the oven and let them cool slightly.

  6. Peel the skins off and slice the beets.

 


 

2. Prepare the Vegetables

  • Slice the cucumber.

  • Thinly slice the red onion.

  • Chop the cilantro.

 


 

3. Make the Dressing

In a small bowl mix:

  • olive oil

  • balsamic vinegar

  • garlic powder

  • salt

 


 

4. Assemble the Salad

  1. In a bowl combine:

    • sliced roasted beets

    • cucumber

    • red onion

  2. Add cilantro and feta cheese.

  3. Pour the dressing over the salad and toss gently to combine.
