Ingredients

2 fresh red beets

1 cucumber, sliced

¼ red onion, thinly sliced

2 tablespoons fresh cilantro, chopped

¼ cup feta cheese, crumbled
Dressing

2 tablespoons olive oil
-
1 tablespoon balsamic vinegar
-
½ teaspoon garlic powder (or 1 small garlic clove minced)

Salt, to taste
Instructions
1. Roast the Beets

Preheat the oven to 400°F (200°C).

Wash the beets and trim the ends.

Wrap each beet individually in aluminum foil.

Place them on a baking sheet and roast in the oven for 1 hour.

Remove from the oven and let them cool slightly.

Peel the skins off and slice the beets.
2. Prepare the Vegetables

Slice the cucumber.

Thinly slice the red onion.

Chop the cilantro.
3. Make the Dressing
In a small bowl mix:

olive oil
-
balsamic vinegar
-
garlic powder
-
salt
4. Assemble the Salad

In a bowl combine:

sliced roasted beets
-
cucumber
-
red onion
-
Add cilantro and feta cheese.
- Pour the dressing over the salad and toss gently to combine.
